Since 1991, and over the years, Monsieur Yves Thuriès has passed on his expertise to the chocolatiers of the Maison, for the delight of all.

To bring each creation to life, our chocolatiers work as a team, each contributing their expertise to the techniques required—whether assembling, molding, or decorating with a cornet. Chocolate demands meticulous handling and special care at every stage of its transformation, a mastery held only by our chocolatiers.

By harvesting our cocoa beans from the San Fernando plantation in Ecuador and our hazelnuts from the Baleyssagues plantation in Southwest France, the Maison ensures both the origin of its essential ingredients and the gustatory quality of its recipes.
Our Baleyssagues hazelnut is used primarily in our creations and is the subject of daily tastings and discussions, making it a true signature ingredient of the Maison.
Our San Fernando cocoa beans, harvested in Ecuador, are grown on a plantation certified by Rainforest Alliance, guaranteeing sustainable farming practices and respect for working conditions. This cocoa reveals an intense flavor with floral and aromatic notes.
