Since 1991 and over the years, Mr. Yves Thuriès has passed on his expertise to the chocolatiers of the Maison, for the delight of all.
Always in pursuit of gustatory excellence, he places great importance on selecting the finest raw ingredients.
Chocolatier Expertise, from idea to creation
To bring each creation to life, our chocolatiers work as a team, each contributing their technical expertise, whether in assembly, moulding, or hand decoration. Chocolate requires precise treatment and attention at every stage of its transformation, mastered only by our chocolatiers.
Each creation tells the story of a meeting between the transmission of the Maison’s expertise and an artist’s soul for taste.

Our chocolatiers craft flavour pairings, focusing above all on emotions and awakening the senses. Whether seeking to surprise or to honour authenticity and tradition, the marble counters of our workshop become the stage for every indulgence.
Commitment, from our San Fernando cocoa beans to our Baleyssagues hazelnuts
By harvesting our cocoa beans at the San Fernando plantation and our hazelnuts at the Baleyssagues plantation in the South-West of France, the Maison controls the origin of its essential raw ingredients and the taste quality of its recipes.
Our Baleyssagues hazelnut is used primarily in our recipes and is the subject of daily discussions and tastings as a signature ingredient of the Maison.
Our cocoa beans are harvested on our San Fernando plantation in Ecuador. Committed to sustainable development, the plantation is Rainforest Alliance certified, ensuring environmentally friendly cultivation and fair working conditions. Our San Fernando cocoa delivers an intense taste with floral and aromatic notes.
